Roasted Veggies

Roasted Veggies:

Place whole onions (red or yellow) and halved yams on a pan in the oven to bake at 400 or 450 for about thirty minutes. You can also put some butternut squash in there too. It's really easy to bake vegetables.

Some folks like to cut sweet potatoes and yams and squash and garlic and onions and then sprinle a bit of olive oil and salt on them and then bake it all in a pan. You can make a dipping sauce for the baked veggies by mixing a bit of sour cream and yogurt with some herbs like dill, thyme, oregano, rosemary, tarragon, basil, parsely, etc. Herbs can be used fresh or dried, and nutritional yeast is good too!
